1Preparation
- Rinse the bulgur in a fine sieve, then press it with your hand to squeeze out the water.
- Leave the bulgur for 15 minutes to soften and absorb the moisture.
- Combine the bulgur with the shell meat, grated onion, salt, cumin, allspice and black pepper.
- Process the mixture in a food processor in batches with splashes of ice-cold water until it forms a smooth, cohesive paste that does not crack when pressed.
- Cover the shell paste and refrigerate it while you make the filling.
2Cooking
- Heat the ghee in a wide pan and stir the pine nuts in it until light golden, then lift them out.
- Add the chopped onion to the pan and stir until soft and translucent.
- Add the filling meat, break it up with the spoon and cook, stirring, until it changes colour and its juices evaporate.
- Season the filling with seven spice, salt and pepper, return the pine nuts, then let it cool completely.
- Wet your hands with ice-cold water and take a ball of shell paste the size of a small lemon.
- Push your finger into the ball and widen it by turning until you have a hollow shell about 5 mm thick.
- Fill the shell with a teaspoon of filling, then close it and shape it into an oval with pointed ends.
- Lay the kibbeh on a plate and refrigerate for 30 minutes to firm up.
- Heat the oil in a deep pot to 175 °C; it is ready when a small cube of bread floats up at once and browns within a minute.
- Fry the kibbeh in batches without crowding, turning them, until deep golden brown and crisp, then lift them onto paper towels.
3Serving
- Arrange the hot kibbeh on a serving plate with the lemon halves.
- Serve with plain yogurt or a green salad.
💡 Tips & common mistakes
- Common mistake: a thick or cracked shell, which splits open in the oil or soaks it up. Keep the shell thin and even, and seal any crack with a wet finger.
- A smooth shell paste is the key step; if it cracks while shaping, process it again with a splash of ice-cold water.
- You can freeze the shaped kibbeh raw and fry them straight from frozen over slightly lower heat so the inside cooks through.
🔁 Substitutions
- Lean lamb can replace the beef in both the shell and the filling.
- Chopped walnuts can replace the pine nuts.
