1Preparation
- Whisk the tahini with the lemon juice, crushed garlic and salt; it will seize and thicken at first, which is normal.
- Add the cold water a spoonful at a time, whisking, until the sauce is smooth with the consistency of yogurt.
- Pound the green chili with the garlic clove and salt in a mortar, then stir in the lemon juice.
- Chop the parsley.
2Cooking
- Put the chickpeas in a pot with the water, baking soda and cumin and simmer gently until the chickpeas are very soft and crush easily between your fingers.
- Crush roughly a quarter of the chickpeas with the back of a spoon in the pot so the liquid thickens slightly.
3Serving
- Lift the hot chickpeas with a slotted spoon into the serving bowl with a couple of spoonfuls of their liquid.
- Pour the tahini sauce over the chickpeas and fold once, gently.
- Spoon over the chili-lemon dressing, then the olive oil, and sprinkle with the paprika and parsley.
- Serve right away while hot, with Arabic bread, raw onion and pickles.
💡 Tips & common mistakes
- Common mistake: using canned chickpeas straight from the can without simmering — they stay firm and don't take up the sauce. Simmering with baking soda makes them buttery soft.
- Cold water is what makes the tahini sauce pale and silky; warm water leaves it heavy and greyish.
- Musabbaha is eaten hot; if it cools the tahini thickens, so rewarm it with a spoonful of chickpea liquid.
🔁 Substitutions
- A red chili can replace the green one in the dressing.
- For dried chickpeas: soak 1½ cups overnight and boil until completely tender before starting.
