1Preparation
- Mix the chicken with the yogurt, garlic, ginger, spices and salt, cover and refrigerate for at least 1 hour.
- Rinse the rice until the water runs clear and soak it for 30 minutes.
- Soak the saffron in the rose water.
- Pierce the dried limes with a knife.
2Cooking
- Heat the oil in a wide heavy-bottomed pot and fry the onions until deep golden and crisp, then lift out half for garnish.
- Add the whole spices, dried limes and green chilies and stir for a minute.
- Add the chicken with its marinade and stir until it changes colour.
- Add the tomatoes, potatoes and half the coriander and mint, cover and cook until the chicken is done, the potatoes are tender and the sauce is thick.
- Meanwhile, boil the rice in salted water until three-quarters cooked, then drain.
- Spread the rice over the chicken and sprinkle with the saffron rose water, ghee, the rest of the herbs and half the fried onions.
- Cover tightly and leave on very low heat until the rice finishes steaming.
3Serving
- Turn the biryani gently from the bottom to mix rice and masala, and spread it on a large platter.
- Top with the remaining fried onions and serve with yogurt-cucumber salad and lime pickle.
💡 Tips & common mistakes
- Common mistake: boiling the rice fully before layering. It turns mushy as it steams; drain it while the centre of the grain is still firm.
- Crisp onions are the backbone of biryani's flavour; do not rush them on high heat or they will burn.
- The longer the marinade, the more tender the chicken; it can marinate overnight.
🔁 Substitutions
- Lamb cubes work too; increase the masala cooking time to about 1½ hours.
