1Preparation
- Wash the rice in several changes of cold water until the water runs almost clear.
- Soak the rice in cold water for 30 minutes, then drain.
- Slice the onions into thin, even rings.
- Soak the saffron in the rose water.
2Cooking
- Heat the oil in a wide, heavy-based pot and fry the onions until deep golden brown and crisp at the edges.
- Lift half the onions onto a plate for garnish, leave the rest with the oil in the pot and take it off the heat.
- Bring the water to a boil with the salt and cardamom in a second large pot.
- Add the drained rice and boil until the grains are soft outside but still slightly firm at the centre when bitten.
- Drain the rice well in a large colander.
- Return the onion pot to the heat, spread the rice over the onions and oil without pressing, and drizzle over the saffron water.
- Seal the pot tightly with a cloth or foil under the lid and steam until the rice is fully cooked and the grains are separate.
3Serving
- Fluff the rice gently with a fork so the white and golden grains mix, then turn it onto the serving plate.
- Top with the reserved fried onions and serve with fried fish or saloona.
💡 Tips & common mistakes
- Common mistake: boiling the rice until fully cooked before draining — it breaks and turns sticky during steaming. Drain it while the centre is still firm.
- The boiling water should taste clearly salty — it is the only seasoning the rice gets.
- Don't stir the rice while it steams; gentle heat and steam finish the cooking.
🔁 Substitutions
- You can replace the saffron with ¼ teaspoon turmeric dissolved in 2 tablespoons of water.
- Ghee can replace the oil for a richer flavour.
